Ingredients
3/4 cup plus 1 tablespoon butter, softened
4 medium-sized apples, peeled and diced
1 cup granulated sugar
1 large egg
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/8 teaspoon ground cloves
1/2 cup caramel frosting
Instructions
Preheat your oven to 350°F (175°C) and line a cupcake tin with liners.
Steam or boil the diced apples until tender, then mash them into a smooth puree and set aside.
In a large bowl, cream together the softened butter and sugar until light and fluffy.
Beat in the egg, then stir in the apple puree until well combined.
In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and cloves.
Gradually add the dry ingredients to the wet mixture, stirring until just combined.
Divide the batter evenly among the cupcake liners.
Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
Allow the cupcakes to cool completely on a wire rack.
Frost with caramel buttercream once fully cooled.
Notes
Store cupcakes in an airtight container at room temperature for up to 3 days or refrigerate for up to a week. For the best flavor, allow the cupcakes to sit for a few hours before serving so the spiced apple essence can permeate the cake crumb.
