Ingredients
4 cups fresh broccoli florets
1/4 cup unsalted butter
1 yellow onion, finely diced
2 cloves garlic, minced
1/4 cup all-purpose flour
3 cups vegetable broth
1 carrot, shredded
1 teaspoon salt
1/2 teaspoon ground black pepper
2 cups sharp cheddar cheese, shredded
1 cup heavy cream
Instructions
In a skillet over medium heat, melt 2 tablespoons of butter and sauté the onion and garlic until softened.
Whisk in the flour to create a roux and cook for 1 minute before slowly adding 1 cup of vegetable broth to thicken.
Transfer the mixture into the slow cooker.
Add the broccoli, shredded carrot, remaining broth, salt, and pepper to the slow cooker.
Cover and cook on low for 4 to 6 hours or high for 2 to 3 hours until vegetables are tender.
Stir in the shredded cheddar cheese and heavy cream until smooth.
Let sit for 10 minutes to allow the flavors to meld before serving.
Notes
For a smoother soup, use an immersion blender to partially puree the soup before adding the cheese and cream. If you prefer a thicker consistency, you can cook with the lid off for the final 30 minutes. Store leftovers in an airtight container in the refrigerator for up to 3 days.
