Ingredients
1 medium eggplant
2 tablespoons olive oil
1 teaspoon dried rosemary
1 teaspoon garlic powder
1 teaspoon smoked paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
Preheat air fryer to 375°F (190°C)
Cut eggplant into 1/2-inch cubes
Toss cubes with 1 tablespoon olive oil, rosemary, garlic powder, smoked paprika, salt, and pepper
Pat cubes dry with paper towels to remove moisture
Spray air fryer basket with non-stick spray (optional)
Arrange eggplant in a single layer in the basket
Air fry for 12 minutes, shaking halfway
Drizzle remaining 1 tablespoon olive oil and flip the cubes
Air fry 3-5 minutes more until golden and crispy
