Description
A Mediterranean-inspired dish with tender chicken, sun-ripened cherry tomatoes, and fragrant basil, cooked to juicy perfection in an air fryer. Perfect for a quick, healthy, and flavorful weeknight meal.
Ingredients
2 boneless, skinless chicken breasts (6 ounces total, 1/2″ thickness recommended)
1 cup cherry tomatoes (halved; San Marzano preferred)
1/4 cup fresh basil (chopped; 4–5 large sprigs)
1 tablespoon olive oil (extra virgin)
1 teaspoon garlic powder
1/2 teaspoon sea salt
1/4 teaspoon black pepper
Instructions
Prepare work surface by placing cherry tomatoes in a small bowl. Pat chicken breasts dry. In a shallow dish, combine garlic powder, salt, and pepper. Drizzle olive oil, then rub mixture over chicken.
Place chicken in air fryer basket (single layer). A single layer ensures even cooking. Set air fryer to 375°F (190°C) and cook for 10 minutes.
Flip chicken gently with tongs. Add halved tomatoes to the basket around and on top of chicken. Continue cooking for 10 minutes, until chicken reaches 165°F and tomatoes are slightly softened.
Remove chicken from air fryer and let rest 5 minutes before serving. Garnish with remaining fresh basil.
Notes
Cherry tomatoes release juice naturally during cooking—no additional liquid is needed.
Basil enhances flavor, but dried basil can be substituted in a pinch.
Use a meat thermometer to ensure chicken is fully cooked (165°F).
