Description
A creamy and refreshing cucumber pasta salad with dill, perfect for a light and healthy side dish.
Ingredients
- 8 oz penne pasta
- 1/2 white onion (finely minced)
- 1 English cucumber (diced into 1/4-inch pieces)
- Black pepper, to taste
- 1/2 cup mayonnaise
- 1 tsp sugar
- 1/2 cup sour cream
- 2 tbsp vinegar
- 2 tbsp fresh dill (finely chopped)
- 1/2 tsp salt
Instructions
1. Combine all dressing ingredients in a small bowl and mix until smooth, then set aside.
2. Thinly slice the onion and soak in cold water to mellow the flavor, then drain well.
3. Cook pasta al dente according to package directions, rinse under cold water, and drain.
4. Cut the cucumber in half lengthwise, remove seeds, and slice into thin pieces.
5. In a large bowl, combine pasta, onion, and cucumber.
6. Pour the dressing over and toss until evenly coated.
7. Refrigerate for at least 40 minutes before serving to allow flavors to develop.
Notes
Soaking the onion reduces sharpness and improves overall flavor.
Use full-fat sour cream and mayonnaise for the creamiest texture.
Fresh dill provides the best flavor, but dried can be used in smaller amounts.
Chill time is important for the best taste and texture.
