Ingredients
1 medium butternut squash
1 teaspoon garlic powder
1 teaspoon smoked paprika
½ teaspoon fresh thyme
¼ teaspoon salt
2 tablespoons cornstarch
1 tablespoon olive oil
Fresh parsley (optional, for garnish)
Instructions
Peel the butternut squash carefully, removing the seeds from the bulb end. Slice the neck and bulb into ¼- to ½-inch planks, then cut diagonal slanted fries for uneven edges
In a bowl, combine cornstarch, garlic powder, smoked paprika, thyme, and salt. Toss the squash fries with olive oil, then add to the seasoning mix and coat evenly
Place the fries in a single layer in the air fryer basket. Air fry at 400°F (200°C) for 18 minutes, flipping halfway through, until golden and crispy
Optional: Sprinkle with fresh parsley before serving
