Description
Tender chicken skewers coated in a garlic parmesan sauce and crisped in the air fryer. A fast, flavorful weeknight meal with a restaurant-quality touch.
Ingredients
1.5 lbs boneless, skinless chicken breasts, cut into 1” cubes
2 tbsp olive oil
1 cup grated Parmesan cheese
4 cloves garlic, minced
1 tbsp lemon juice
1 tsp lemon zest
1 tbsp fresh parsley, chopped
Salt and pepper to taste
8-inch metal skewers
Instructions
1. Preheat air fryer to 375°F (190°C)
2. In a bowl, mix Parmesan, garlic, lemon juice, zest, parsley, and 1 tbsp olive oil
3. Toss chicken cubes in remaining 1 tbsp oil and season with salt/pepper
4. Thread chicken onto skewers, alternating with optional cherry tomatoes if desired
5. Brush garlic parmesan mixture evenly over skewers
6. Air fry for 10-12 minutes, flipping halfway until golden and cooked through
Notes
Brush with sauce during last 2 minutes to prevent burning
Use parchment paper lining for easier cleanup
Vegetarian option: Substitute chicken with portobello mushrooms
