Description
This easy homemade crockpot chicken noodle soup is a gentle hug in a bowl, perfect for those days when you need something nourishing without spending hours over the stove. By using a slow cooker, we allow the chicken and vegetables to meld together over several hours, resulting in a rich, flavorful broth that tastes like it has been simmering all day long. It is a humble, unpretentious meal that celebrates the simple union of tender poultry, earthy carrots, aromatic onions, and soft noodles.
Ingredients
2 large chicken breasts
2 large carrots, sliced into rounds
1 medium yellow onion, diced
2 celery ribs, sliced thinly
4 cloves garlic, minced
8 cups chicken broth
1 teaspoon dried thyme
1 teaspoon dried parsley
Salt and black pepper to taste
8 ounces wide egg noodles
Instructions
Place the chicken breasts, carrots, onion, celery, and garlic into the slow cooker.
Pour the chicken broth over the ingredients.
Add the dried thyme, dried parsley, salt, and black pepper.
Cover and cook on low for 6-7 hours or on high for 3-4 hours.
Remove the chicken breasts, shred with two forks, and return to the pot.
Add the egg noodles during the last 30 minutes of cooking until tender.
Stir well and serve hot.
Notes
You can add other vegetables like peas or corn for extra color. If you prefer a thicker soup, cook the noodles separately and add them to each bowl before serving to prevent them from absorbing too much broth while in the crockpot.
