Golden, crispy chicken breasts stuffed with a creamy blend of cream cheese, spinach, sun-dried tomatoes, herbs, and garlic. Perfect for a quick yet elegant weeknight meal.
Ingredients
4 boneless, skinless chicken breasts
8 oz cream cheese, softened
1 cup fresh spinach, chopped
1/4 cup sun-dried tomatoes, chopped
1 clove garlic, minced
1 tbsp Italian herbs (or basil/thyme)
1/2 cup Italian-seasoned breadcrumbs
Olive oil
Salt and pepper to taste
Instructions
Flatten each chicken breast with a meat mallet to 1/2-inch thickness.
Cut a horizontal slit through the center of each, avoiding cutting all the way through.
In a bowl, mix cream cheese, spinach, sun-dried tomatoes, garlic, and herbs.
Stuff each chicken breast with the filling, then fold edges inward to seal.
Coat both sides with breadcrumbs, pressing gently.
Drizzle olive oil over the chicken; season with salt and pepper.
Air fry at 375°F (190°C) for 18–20 minutes, flipping halfway, until chicken is cooked through and breadcrumbs are golden.
Notes
For extra flavor, add a pinch of red pepper flakes to the filling.
Use fresh spinach and sun-dried tomatoes in oil (drained) for a richer taste.
Let rest 5 minutes before serving to retain juices.
Store leftovers in an airtight container for up to 3 days.
