Description
A plant-based twist on classic Mexican elote, this air fryer street corn features charred sweet corn smothered in zesty aioli, salty vegan feta, and fresh herbs. Quick, flavorful, and perfect for summer grilling.
Ingredients
4 ears fresh corn, husks removed
1/2 cup vegan mayonnaise
1/4 cup nutritional yeast (for cheesy flavor)
2 tbsp lime juice
1 tsp chili powder
1/4 tsp smoked paprika
1 tbsp chopped fresh cilantro
1 tbsp crumbled vegan feta cheese
1/4 tsp coarse salt
2 tbsp olive oil (for brushing)
Instructions
Preheat air fryer to 400°F (200°C)
Brush corn cobs with olive oil and rub with coarse salt
Place corn in air fryer basket cut-side down and cook for 15 minutes
Flip corn and cook 10 more minutes until lightly charred
In a small bowl, mix vegan mayonnaise, lime juice, chili powder, and smoked paprika until smooth
Brush aioli mixture evenly over warm corn
Sprinkle generously with nutritional yeast and vegan feta
Garnish with fresh cilantro before serving
Notes
For extra char, press parchment paper lightly onto corn during air frying
Use a mini food processor to blend aioli ingredients for smoother texture
Leftovers can be stored in an airtight container for 2 days
