Ingredients
4 boneless, skinless chicken breasts
4 tablespoons unsalted butter
6 cloves garlic, minced
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon dried thyme
Salt and black pepper to taste
4 medium carrots, peeled and sliced
4 medium potatoes, peeled and quartered
Instructions
Season the chicken breasts with salt, pepper, garlic powder, onion powder, and thyme.
Place the sliced carrots and potatoes into the bottom of the crockpot.
Melt 2 tablespoons of butter in a small bowl, then mix in the minced garlic. Spread this garlic butter mixture over the chicken breasts.
Place the seasoned chicken on top of the vegetables in the crockpot.
Dot the remaining 2 tablespoons of butter over the chicken and vegetables.
Cover the crockpot and cook on low for 6 to 7 hours or on high for 3 to 4 hours.
Fluff the chicken with a fork before serving. Serve warm with the vegetables and butter sauce.
Notes
For a richer flavor, add a splash of vegetable broth to the crockpot before cooking.
You can substitute zucchini or parsnips for the carrots and potatoes if desired.
Store leftovers in an airtight container in the refrigerator for up to 3 days.
