Ingredients
3 medium zucchinis (about 12–15 slices when cut 1/8-inch thick)
2 tablespoons cornstarch
1 teaspoon sea salt
1 teaspoon garlic powder
½ teaspoon dried oregano
1 tablespoon olive oil
Optional: pinch of smoked paprika or lemon zest (for added flavor)
Instructions
Preheat air fryer to 375°F (190°C)
Thoroughly pat zucchini slices dry with paper towels to remove moisture
In a bowl, combine cornstarch, salt, garlic powder, and oregano
Toss zucchini slices in the seasoning mixture until fully coated
Lightly drizzle olive oil over the slices and toss to coat
Arrange in a single layer in the air fryer basket (work in batches if needed)
Cook for 6-8 minutes, flip carefully, and cook 6-8 minutes more until golden and crispy
