Description
A hearty, creamy Tuscan-inspired one-pot meal with tender chicken, sun-dried tomatoes, spinach, and orzo in a flavorful Parmesan-cream sauce. Easy slow-cooker magic!
Ingredients
1.5 lb boneless, skinless chicken breasts
1 (2.5 oz) jar sun-dried tomatoes (oil-packed)
1 large onion, chopped
4 garlic cloves, minced
1 cup uncooked orzo pasta
1 (24 oz) container cream of mushroom soup
1/2 cup heavy cream
1 cup grated Parmesan cheese
10 oz fresh spinach
2 tbsp olive oil
1 tbsp Italian seasoning
Salt and pepper to taste
Instructions
Season chicken with Italian seasoning, salt, and pepper
Add olive oil, chicken, onion, garlic, and sun-dried tomatoes to slow cooker
Stir in cream of mushroom soup and 1 cup water
Mix well and cook on low for 6 hours
1 hour before serving, add uncooked orzo
15 minutes before serving, stir in heavy cream, 3/4 cup Parmesan, and spinach
Cook on high until spinach wilts and orzo is tender
Sprinkle with remaining Parmesan before serving
Notes
Use halal-certified chicken if preferred
Omit cream for lactose-free version
Optional: add 1/4 tsp dried basil or oregano
Store in well-sealed containers up to 3 days
