Description
These air fryer baked potatoes have crispy, crackly skins and fluffy centers in less time than the oven. Perfect as an easy side dish, quick lunch, or meal prep staple.
Ingredients
- 4 medium to large russet potatoes
- 2 tablespoons olive oil
- 1 teaspoon kosher salt
- Optional toppings: sour cream, shredded cheese, chopped chives, butter, bacon bits, black pepper, or fresh herbs
Instructions
1. Scrub the potatoes under running water to remove all dirt, then dry them completely.
2. Prick each potato 4 to 5 times with a fork to allow steam to escape.
3. Rub each potato with olive oil and sprinkle evenly with kosher salt.
4. Arrange the potatoes in a single layer in the air fryer basket without overcrowding.
5. Air fry at 400°F for 35 to 45 minutes, flipping halfway through.
6. Check doneness by piercing with a fork; the skin should be crisp and the inside fluffy.
7. Let the potatoes rest for 5 minutes before slicing open.
8. Fluff the inside with a fork and add your favorite toppings.

Choose russet potatoes for the fluffiest inside and crispiest skin.
