Description

2 large eggs, room temperature
1 tablespoon all-purpose flour
2 tablespoons hot sauce (Frank’s Red Hot preferred)

1/2 teaspoon cayenne pepper
1/2 teaspoon salt
1/2 teaspoon black pepper
1 cup panko breadcrumbs
2 boneless, skinless chicken breasts
2 brioche buns
2 tablespoons mayonnaise
Lettuce, sliced tomato, pickle (optional)


Instructions

Preheat air fryer to 375°F (200°C)
Pound chicken breasts to 1/4-inch thickness
In a shallow bowl, combine flour, hot sauce, garlic powder, cayenne, salt, and pepper
In a second bowl, beat eggs
Dredge chicken in the hot sauce-spice mix, then dip into eggs, followed by the panko
Place the coated chicken in the air fryer basket (do not overcrowd)
Drizzle with olive oil or spray with oil, then air fry for 5 minutes per side or until golden and fully cooked
Meanwhile, spread mayonnaise with 1 tablespoon hot sauce in a small bowl
Toast brioche buns in the air fryer for 1 minute

Notes

The chicken should reach 165°F internally. Use fresh brioche for the softest bun. Adjust spice level by adding more/less hot sauce in the mayo. Reheat leftovers in the air fryer for 2-3 minutes.
