Description

This summery zucchini fritters recipe combines sweet corn, fresh zucchini, onion, and Parmesan cheese, all cooked to perfection in the air fryer.


Ingredients

  • 1 pound zucchini, about 2 medium-sized zucchinis
  • 1 cup corn kernels, canned or frozen
  • 1/4 cup grated parmesan cheese
  • 1/4 cup grated yellow onion
  • 1 clove garlic, finely minced
  • 1 tablespoon dried parsley
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon paprika
  • 2 eggs, lightly beaten
  • 1 cup almond flour, or all-purpose flour
  • 1 teaspoon baking powder
  • Cooking oil spray
  • Sour cream, yogurt, herb dip, or ranch dressing for serving, optional

Instructions

1. Preheat the air fryer to 360°F.

2. Shred the zucchini using the large holes on a box grater and transfer to a kitchen towel.

3. Wrap the towel around the zucchini and squeeze out as much liquid as possible, then place zucchini in a large bowl.

4. Add corn kernels, parmesan cheese, onion, garlic, parsley, salt, pepper, basil, oregano, paprika, and beaten eggs; stir to combine.

5. Add flour and baking powder and stir until fully incorporated. Add more flour if the mixture is too wet.

6. Shape the mixture into 10 to 12 patties.

7. Optional: Place the uncooked patties in the freezer for 5 to 8 minutes to help keep their shape.

8. Grease the air fryer basket with cooking spray.

9. Working in batches, place the fritters in a single layer in the air fryer basket and spray each patty with cooking spray.

10. Cook for 6 minutes, then flip the fritters over.

11. Spray again with cooking spray and continue cooking for 6 to 8 more minutes, or until browned.

12. Remove from the air fryer and serve warm.


Notes

For crispier fritters, squeeze as much moisture as possible from the zucchini before mixing.

Almond flour keeps the recipe lower carb, but all-purpose flour works just as well.

Serve with sour cream, ranch dressing, yogurt dip, or your favorite herb sauce.
