Description
Crispy and golden veggie fritters made with a medley of vegetables, flour, breadcrumbs, and a protein binder. Perfect as an appetizer or a quick snack, these fritters are healthy, customizable, and full of flavor.
Ingredients
2 cups mixed vegetables (grated or finely chopped): zucchini, carrots, bell peppers, onions
1/2 cup all-purpose flour (or cornstarch and rice flour for gluten-free)
1/2 cup breadcrumbs (or crushed cornflakes for gluten-free)
1 large egg (or 1 flax egg for vegan)
1/4 cup finely chopped onion
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon dried herbs (like thyme or oregano)
2 tablespoons olive oil or cooking spray
Instructions
Preheat air fryer to 375°F (190°C)
In a large bowl, mix the finely chopped vegetables with salt, pepper, garlic powder, and herbs
Let the veggies sit for 5 minutes to allow excess moisture to drain (optional, but recommended)
In a separate bowl, whisk together flour, breadcrumbs, chopped onion, and the egg or flax egg
Fold the dried veggies into the wet mixture until well combined
Form the mixture into small patties (about 2-3 inches in diameter)
Lightly brush each patty with olive oil or spray with cooking spray
Place the fritters in the air fryer basket in a single layer, making sure they are not overlapping
Air fry for 6-8 minutes, flipping halfway through or until golden and crispy
Repeat in batches as needed
Serve hot and enjoy
Notes
You can use seasonal vegetables like shredded cabbage, blanched broccoli, or roasted butternut squash.
Storage: Store cooled fritters in an airtight container in the refrigerator for up to 2 days; reheat in the air fryer for a crisp finish.
For extra flavor, add grated Parmesan or nutritional yeast (if not vegan).
Flax egg = 1 tablespoon ground flaxseed mixed with 3 tablespoons water.
