This vibrant, no-fuss shrimp fajitas recipe uses an air fryer to deliver tender shrimp and charred veggies in under 20 minutes. A perfect Tex-Mex dish with smoky taco seasoning, customizable toppings, and minimal cleanup!
Ingredients
1 lb large shrimp, peeled and deveined
1 red bell pepper, sliced
1 green bell pepper, sliced
1 yellow onion, sliced
2 tbsp olive oil
2 tbsp taco seasoning
1 lime, juiced
1 tsp salt
1/2 tsp black pepper
Instructions
Pat shrimp dry with paper towels
In a bowl, toss shrimp with 1 tbsp olive oil, 1 tbsp taco seasoning, salt, and pepper
Prepare vegetable slices by separating into even thickness pieces
Place shrimp and vegetables in air fryer basket in a single layer
Spray with remaining 1 tbsp olive oil
Air fry at 375°F for 8-10 minutes, shaking basket halfway through
Sprinkle remaining taco seasoning over vegetables during last 2 minutes of cook time
Toss with lime juice immediately after cooking
Notes
Use prepped frozen shrimp for time-saving convenience
Marinate shrimp for 30 minutes for deeper flavor
