Ingredients
6 Roma tomatoes, halved
2 tablespoons olive oil
1 teaspoon sea salt
½ teaspoon black pepper
1 teaspoon dried oregano
½ teaspoon garlic powder
Instructions
Preheat the air fryer to 400°F (200°C).
Place the halved Roma tomatoes cut-side up in the air fryer basket.
In a small bowl, mix olive oil, salt, black pepper, oregano, and garlic powder.
Brush the seasoning mixture evenly over the cut sides of the tomatoes.
Roast the tomatoes in the air fryer for 15-20 minutes, until blistered, softened, and slightly caramelized.
Let cool slightly before serving.
Notes
For an extra smoky flavor, add a pinch of smoked paprika to the seasoning mix.
Store leftovers in an airtight container in the refrigerator for up to 3 days.
