Instructions

Preheat air fryer to 375°F
Slice zucchini into 1/4-inch rounds and pat dry with a paper towel
Place flour in a shallow bowl
Beat eggs in a second shallow bowl
Mix Parmesan, breadcrumbs, garlic powder, Italian seasoning, salt, and pepper in a third bowl
Dip each zucchini round in flour, shaking off excess, then in egg, and then press into the Parmesan mixture to coat
