Ingredients
1.5 lbs boneless, skinless chicken breast (cut into 1-inch cubes)
1/4 cup fresh lemon juice
2 tablespoons olive oil (extra virgin for rich flavor)
2 cloves garlic (minced fine)
1 teaspoon dried oregano
1 teaspoon dried thyme
1 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
Marinate chicken pieces in a mixture of lemon juice, olive oil, garlic, oregano, thyme, paprika, salt, and pepper for at least 30 minutes.
Preheat air fryer to 375°F (190°C) for 3–5 minutes.
Pat chicken cubes dry and arrange in a single layer in the air fryer basket.
Air fry for 10–12 minutes, flipping halfway, until golden and cooked through.
Toss with fresh lemon zest (optional) before serving to enhance brightness.
Notes
For extra crispiness, toss chicken with a light flour coating before air frying.
Adjust lemon juice to taste—use 1/3 cup for a brighter flavor.
