Ingredients
2 lbs baby potatoes
3 tbsp olive oil
1 tbsp dried oregano
1 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper
1 lemon (for serving)
Instructions
Wash and quarter baby potatoes
Toss with olive oil, oregano, garlic powder, salt, and pepper
Spread in a single layer in air fryer basket
Air fry at 375°F (190°C) for 15 minutes
Shake basket and cook 5-7 more minutes until golden and crisp
Squeeze fresh lemon juice over potatoes before serving
Notes
Use a non-stick air fryer basket for easier cleanup
Flip potatoes halfway for even browning
Fresh oregano and lemon zest work well as substitutes
Store leftovers in airtight container for 2 days
