Ingredients
4 large green tomatoes, firm
1 cup all-purpose flour
1/2 cup cornmeal
1 tsp salt
1/2 tsp paprika
1/4 tsp black pepper
1/4 cup buttermilk (optional)
1 tbsp olive oil spray (optional)
Instructions
Preheat air fryer to 375°F (190°C)
Slice tomatoes into 1/2-inch thick rounds
Combine flour, cornmeal, salt, paprika, and pepper in a shallow bowl
If using, mix buttermilk in a separate dish
Dip each tomato slice into buttermilk, then coat evenly with flour mixture
Place in air fryer basket, avoiding overlap
Spritz both sides with olive oil spray
Cook 8-10 minutes per side until golden and crisp
Let rest 5 minutes before serving
Notes
Tomatoes stay juicy best at 1/2-inch thickness
Use olive oil spray if desired for extra crunch
Freeze coated slices on parchment paper before cooking if preparing ahead
