Ingredients
1 lb white fish fillets
1/4 cup all-purpose flour
1 tbsp ground cumin
1 tbsp paprika
2 cloves garlic, minced
1 tbsp lime juice
2 tsp chipotle seasoning
1 large carrot, thinly sliced
1/2 cup frozen peas
1 tbsp apple cider vinegar
1/4 tsp sugar
4 cups cooked brown rice
1 bed mixed greens
1/2 cup sliced red onion
1 avocado, sliced
1 lime, cut into wedges
2 tbsp non-alcoholic chipotle-lime dressing (store-bought or homemade)
2 tbsp halal-approved plant-based ranch dressing
2 tbsp unsalted raw sunflower seeds
Instructions
Preheat air fryer to 375°F
Combine flour, cumin, paprika, garlic, lime juice, and chipotle seasoning in a bowl
Dredge fish fillets in the seasoned flour until coated
Air-fry fish in a single layer for 7-9 minutes until golden and flaky
Whisk together apple cider vinegar, sugar, and 2 tbsp warm water until sugar dissolves
Toss with carrot slices and frozen peas
Serve hot rice in bowls, top with fish
Layer greens, red onion, avocado, and slaw
Drizzle with chipotle-lime dressing and sprinkle sunflower seeds
Finish with ranch dressing and lime wedges
