Ingredients
1 large eggplant, sliced into 1/2-inch rounds
1 tablespoon olive oil (optional for crispiness)
1/4 cup pizza sauce
2 cups shredded mozzarella cheese
1/4 cup grated Parmesan cheese (optional)
Assorted toppings (bell peppers, mushrooms, olives, basil, etc.)
Instructions
Pat eggplant slices dry with paper towels to remove excess moisture
Toss slices with olive oil if using
Air fry at 375°F (190°C) for 10 minutes per side until golden and crisp
Brush or spoon pizza sauce over the slices
Top evenly with mozzarella, Parmesan, and desired toppings
Air fry at 370°F (185°C) for 5-7 minutes, until cheese bubbles and browns
Let cool slightly before serving
