Description
Crispy, golden baby potatoes with smoky spices and optional Parmesan, made quickly in an air fryer. Fluffy interiors, crunchy exteriors, and zero deep frying required.
Ingredients
2 lbs baby potatoes
3 tbsp olive oil
1 tbsp smoked paprika
1 tsp garlic powder
1 tsp onion powder
1/2 tsp sea salt
1/4 tsp black pepper
Optional: 1/4 cup grated Parmesan cheese
Optional: fresh rosemary or parsley (chopped)
Optional: tangy aioli for serving
Instructions
Peel and halve baby potatoes
Soak in cold water for 20 minutes to remove excess starch
Pat dry completely with paper towels
Place potatoes in air fryer basket and toss with olive oil, smoked paprika, garlic powder, onion powder, salt, and pepper
Preheat air fryer to 380°F
Air fry for 20-25 minutes, shaking the basket halfway through
Once golden and crisp, optionally toss with Parmesan cheese or fresh herbs before serving
Notes
Leftovers can be reheated at 350°F to achieve kettle chip texture
Always ensure potatoes are fully dry before coating to maximize crispiness
For vegan version, omit Parmesan
