Tender marinated chicken and colorful vegetables, air-fried to tender-crisp perfection. A quick, flavorful meal ready in 45 minutes with minimal cleanup.
Ingredients
4 boneless, skinless chicken breasts (halal certified)
1 red bell pepper
1 yellow bell pepper
1 red onion
1 zucchini
1 cup cherry tomatoes
1/3 cup olive oil
3 cloves garlic, minced
Juice of 2 lemons
1 teaspoon paprika
1 teaspoon ground cumin
Salt and black pepper to taste
8–10 metal skewers
Instructions
Combine chicken, olive oil, garlic, lemon juice, paprika, cumin, salt, and pepper in a bowl; marinate 30 minutes.
Cut vegetables into 1-inch chunks.
Alternate threading chicken and veggies onto skewers.
Place skewers in air fryer basket (no oil spray needed). Cook at 400°F (200°C) 15-18 minutes, flipping halfway.
Notes
Use halal-certified chicken. Double marinade for extra flavor. Pre-thread skewers up to 6 hours ahead; store refrigerated.
Serve with rice, quinoa, or flatbread. For crispy finish, broil 1 minute at 400°F.
