Ingredients

4 chicken breasts (boneless, skinless)
1 tbsp ghee (or coconut oil)
1 tsp ground coriander
1 tsp ground cumin
1 tsp turmeric
1/2 tsp ground cinnamon
1/4 tsp ground cardamom
2 shallots (finely chopped)
2 cloves garlic (grated)
3/4 cup coconut milk
1/2 cup almond paste or pureed sliced almonds
2 tbsp yogurt (plain or Greek)
1 tbsp lemon juice
Salt to taste


Instructions

Preheat air fryer to 360°F (180°C)
Rub chicken with turmeric and salt
Mix ghee with spices; rub onto chicken
Place in air fryer basket and cook for 15 minutes
Meanwhile, sauté shallots and garlic until softened
Add coconut milk, almond paste, and yogurt to pan
Simmer sauce until thickened
Strain sauce through cheesecloth for smooth texture
Serve chicken topped with sauce


Notes

Use light coconut milk for lighter calories
Almond paste can be substituted with cashew butter
Finish with chopped fresh cilantro
