Ingredients
2 large carrots, peeled and sliced into 1/4-inch rounds
1 tablespoon avocado oil
1 teaspoon coconut aminos
1/2 teaspoon smoked paprika
1/4 teaspoon dried thyme
1/4 teaspoon dried rosemary
Pinch of salt
Pinch of black pepper
Optional: 1 tablespoon vegan parmesan (processed), chopped pistachios for garnish
Instructions
Toss carrot slices with avocado oil in a bowl until evenly coated
In a separate bowl, mix coconut aminos, paprika, thyme, rosemary, salt, and pepper
Combine oil-coated carrots with spice mixture until fully coated
Arrange carrots in a single layer in the air fryer basket
