Ingredients
1.5 lbs chicken breast, cut into 1-inch cubes
1 red bell pepper, cut into 1-inch pieces
1 yellow bell pepper, cut into 1-inch pieces
1 zucchini, cut into 1-inch chunks
1 red onion, cut into 1-inch pieces
1/3 cup olive oil
2 tablespoons lemon juice
4 garlic cloves, minced
1 teaspoon paprika
1 teaspoon ground cumin
1 teaspoon dried oregano
Salt and pepper to taste
Instructions
In a large bowl, whisk together olive oil, lemon juice, minced garlic, paprika, cumin, oregano, salt, and pepper to create the marinade.
Add the chicken cubes to the marinade and toss to coat evenly. Allow marinating for at least 10 minutes while you prepare the vegetables.
Thread the chicken and vegetable pieces onto skewers, alternating ingredients for balanced flavors and texture.
Place the skewers in the air fryer basket, making sure they are not overlapping for even cooking.
Air fry at 400°F (200°C) for 15 minutes, or until the chicken is fully cooked and the vegetables are tender with a nice char.
